Introduction

Ingredients

  • 3 cups glutinous rice
  • 1 can (14 ounces) coconut milk
  • 1 cup brown sugar
  • 1/2 cup water
  • 1/2 teaspoon salt

Instructions

  1. Rinse the glutinous rice several times until the water runs clear.
  2. In a large pot, combine the rice, coconut milk, brown sugar, water, and salt.
  3. Bring the mixture to a boil, then reduce heat to low and simmer for 20 minutes, or until the rice is tender and most of the liquid has been absorbed.
  4. Remove the pot from the heat and spread the rice mixture into a greased 9x13-inch baking dish.
  5. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  6. Bake the biko for 20-25 minutes, or until the top is caramelized and slightly crispy.
